During our visit to Finca Catalan this year, our partner, producer Nico Hammond, surprised us with a truly special, exclusive honey processed coffee to celebrate our nine year partnership.
Honey processing lives somewhere between natural and washed coffees. Unlike naturals, where the fruit dries intact, honey removes the skin but leaves the pulp and some mucilage. This results in a coffee with a perfect balance of sweetness and fruity notes—more defined and cleaner than naturals, yet fuller-bodied and less intense. It’s a special, less common process that offers a unique, flavor-packed experience.
