Coffee farms here are typically under 5 hectares, tended by indigenous groups with decades of experience. The area enjoys two rainy seasons, resulting in a main crop and a mid crop (mitaca), ensuring fresh coffee year-round. Coffees from near Popayán are known for their pleasant aroma, medium acidity, medium body, and a sweet, chocolate aftertaste due to the soil conditions, altitude, and washed processing methods.
